Native Thyme/ Native Sage
This strongly aromatic bush is a native to south east New South Wales, eastern Victoria, South Australia and Tasmania.
Common names for Prostanthera incisa include Native Sage and Native Thyme and as with many plants, its taste can vary according to where it is grown and whether it is nurtured in its natural environment or in greenhouse conditions.
The bush grows up to 2 metres high, with a showy display of lilac flowers on the tips in spring. This plant is related to the Westringia and naturally occurs in cool moist gullies, particularly along river banks.
The ingredient was used by indigenous Australians for its medicinal properties.
Fabulous used in dishes featuring kangaroo, chicken, turkey, pork or lamb.
