Rosella flower flakes
NOTE: a kg of fresh flowers yields approx 44gm dried flakes
Most commonly known for its use in champagne. It works well in either sweet or savoury dishes and goes well with ginger, chilli, and sugar, and fruits such as apples, peaches pears, nectarines and banana.
Fabulous accompaniment for lamb, pork and game. Use it in sauces, jams, ice cream and pastries.
Wonderful as a refreshing summer drink:
Combine 750ml of hot water, 50gm dried rosella flakes, 150gm sugar and the juice of one lime. When cooled, place in fridge to soak overnight. Strain (reserve the pulp for use in desserts and sweet sauces). Then add 1.5 Litres of cold water. Serve in a tall glass with fresh mint and ice.
Variation: add toasted pine nuts

Added these successfully (they were delicious) to rice pudding. Worked well, although I'd prefer to use full flowers.

Great Quality
I'm so pleased with my purchase of Roselle Flakes. The quality of the flakes are excellent and the product is very clean (ie very little seeds and stalks, no flower leaves). I've used both fresh and dried roselle (purchased elsewhere) and I'm extremely happy with not only this product but also Bush Food Shop.com.au. Order was processed and delivered within 5 days.
